This variety’s history is hard to pinpoint, likely spanning millennia. Its flavor has a deeper muskiness when cooked, finishing warm and light to complement a savory dish well. The heads have a single layer of plump cloves wrapped in a rosy pink. Bulb wrappers have faint pink striping. Cloves are very loosely wrapped and easy to peel, leading to a shorter than average storage life.
Plants sprout quickly with larger than average leaves. More prone to rust than other varieties, the plants compensate by maturing super early (the first one in 2026). Once the rust fully takes, the bulbs are done developing around late April, so most years have a bumper crop.
Bulbs and plants are more prone to rot with the excess rain/moisture that’s typical in early spring. You have to be extra precise with the harvest timing. We stop watering with around 7-8 green leaves remaining and harvest with around 6 remaining, sometimes sooner. If there’s a big rainstorm approaching and the bulbs underground have sized up, get them inside before it pours.
